Automatic training detection
Probably the biggest new fitness feature on the Apple Watch is automatic workout detection. If the Apple Watch detects that you start training, it will indicate that it is starting to track it.
And best of all, if you've missed a few minutes before you start training, Apple Watch will give you a retrospective credit. And if you forget to stop tracking after training, the Apple Watch detects it and automatically stops it.
More training modes

New readings while running
While running, you get new readings during the workout. For example, during an outdoor run, the Apple Watch keeps track of your speed. You can also set up a step warning to keep the target pace. And you can see your cadence to track your steps per minute.
Listen to podcasts
Technically, this is not a fitness-oriented feature, but it's not unusual to start a podcast for a hike or other workout. Now podcasts come to the Apple Watch. Your progress in a podcast will be synced across all your Apple devices, and you can search for podcasts in any Apple podcast by asking Siri.
