The instant pot also makes poached chicken breasts child's play, and like the eggs, this protein can be turned into countless dishes from chicken salad to enchiladas.
My poached chicken instant pot recipe comes from Amy + Jacky, but I usually change the recommended spices. I leave out oregano, rosemary and thyme and instead add whole peppercorns and a few peeled, crushed cloves of garlic. This ensures that the chicken works in virtually any dish you can think of (e.g. you can use the same batch of chicken in numerous recipes for the week).
That said, you can add other ingredients to the pot if you know you want to use the chicken in certain dishes. Add some cumin and oregano, and maybe a dried chilli pepper, if you turn your chicken into burritos and tacos, for example.
