Perfect Grilling, Every Time
If you're new to grilling and want your meat to come out right every time, take a disposable aluminum pan. It may sound weird, but put the empty pan on the grill rack while you cook and then just leave it there.
Aluminum absorbs heat perfectly and can lower the temperature inside the grill by almost 30 degrees. And because it can lower the temperature, it's also a great tool to balance hot spots in your grill.
The lower temperature means you cook your food a little longer, but it gives you a bigger window of time between uncooked burgers and charred into a crunchy one. This is ideal for a charcoal grill where you have less control over the heat distribution than on a gas grill.
Throw herbs into the coals
Add a bit of herbal and smoke flavor by placing fresh herbs directly on the coals. First soak the herbs in water and then add them to coals. Even when soaking, they will burn quickly, so cover the grill quickly after adding so the smoke does not penetrate.
Woody herbs like rosemary and thyme will hold up in the heat a bit longer than basil or dill, but experiment with what flavors you choose.

There is a really simple solution to this: use two skewers instead of one. This gives the kebab more stability and prevents it from turning.

Cooking for a large crowd? Maximize all the free space on your grill by toasting potatoes in the coals.
This is how it works:
- Prick a whole potato a few times with a fork, smear the skin in melted butter or olive oil and sprinkle with salt.
- Wrap the potato well in heavy aluminum foil (or not, if you like) and tuck it into the coals with tongs.
- Cook until fork tender, about 30 to 60 minutes depending on the potato size.
Turning the Heat
Gas grills are comfortable and require less setup than charcoal, but they are not always as hot as charcoal. If the maximum temperature of your gas grill is not hot enough, try adding lava stones.
